Apple Rose and Plum Tart

Lately I have been experimenting with the apple rose tart idea.  This version’s “crust” has walnuts and dates, sweetened with a little bit of maple syrup.  A fruit compote was spread over the crust, then plums and apples layered on top.

Today’s version is gluten-free and low in fat.  Instead of fruit compote, I’ve also pureed non-fat yogurt and over-ripe bananas  — this yields a very sweet creamy filling with little to no added sugar.

Recipes for apple rose tart are varied and one can find more than a few variations online.  There are quite a number of ‘how to’ YouTube videos available.  Many demonstrate techniques that are overly complicated.  I’m still playing with the recipe streamlining the technique.  This will be in my new cookbook.
